wheat free Toddler Snack

This is a recipe from the old juice bar days. However not my own. Its a great any time snack for the little ones. And a wonderful recipe for the multi tasker mom!!

1/2 cup sofened butter or sunflower oil
1/2 cup or more of pure maple syrup
3 cups brown rice flour
1 cup ground organic almonds *
4 TBS raw sesame seeds (optional) can be omitted for the really little ones
1/4 tsp sea salt
1/4 tsp cinnamon

Cream butter and maple syrup. Add the rest of the ingredients and mix well. wrap and refrigerate until firm. using flower roll out dough and cut desired shapes. I like making simple rectangles for little hands. Dust with more cinnamon. Bake at 350 for 10-15 mins, less for a softer cookie or more for a crispier cracker.

*For the multi tasker: (not nessesary, but why not!)

Instead, pre soak the almond in 4 cups of water overnight. Blend in a blender for a minute. Using a cheese cloth or fine sieve, separate the pulp from the liquid. Make sure to catch the liquid because that becomes your ALMOND MILK. The pulp is your ground almonds for the above recipe. I take a TBS of the pulp out and use it that day as a facial scrub!! See, a great recipe for the multi tasker. Almond milk, cookies and even a natural face scrub!!!

  1. what a fantastic recipe. I am going to try this tomorrow. We have been looking for some great wheat free recipes while we battle candida here. I am also excited about the facial scrub, as I can get in a great snack and pamper myself!
