This week I have been using a lot of fresh basil, and I do mean a lot! I put it in salads, sandwiches, a leaf or two on its own when I walk by and even in lemonade!
When an herb begins to flower, or go to seed you need to pinch the flower off to encourage more growth of the herb, rather than having your plant put its wonderful energy into seeding. My basil has been flowering and instead off just tossing the buds aside as I normally do, I decided to use it in the kitchen. I made a basil lemonade witch was interesting, compatible and very refreshing!
Basil Lemonade:
Simple syrup with basil flowers:
basil flowers and or leafs and stems
1/2 cup water
2 or more tbs of sugar or honey or both
boil water with sugar until dissolved, reduce heat slightly and add basil. wait a couple of minutes then strain, keeping the liquid. Thats your simple syrup. you can make it as sweet as you like.
Add basil syrup to pre made lemonade or simply juice a few lemons, add water (or soda water if you like a bubbly refresher) and simple syrup, maybe vodka, maybe not!!
