Banana Muffins and Meat loaf from Carlas Cookbook
My Mom has a Cook book. A great cookbook. I'll be cooking her recipes and blogging about them over the next little While.

It is very rare that my Husband makes a specific meal request, so when he does I try my best to satisfy his hunger. If the roles were reversed I would hope he'd do the same!! Last night he asked if we could please have MEATLOAF. "Sure babe" was my quick response. Meatloaf is not something I make. I've fooled him a few times with a lentil nut loaf with mushroom gravy, but tonight he's getting the real deal 'cause Carla makes a mean meatloaf!
I've prepared it according to recipe except I forgot to add the spinach. No problem, I'll make a spinach salad with avocado, dijon dressing and a side of roasted root veg. and peas, because peas are my favorite.
I wont bake the loaf until and hour before dinner, but in the mean time I've made some mouth watering Banana Muffins, pg. 110.
The aroma of those muffins is enough to make those with weakest of appetites salivating for more!

After Dinner: The Results are in......
The dinner was great . My husband was so happy to have Meatloaf. He said "I love when you ask for something and you get it!" Me too!!
I got "wow" and "thanks" and "fantastic" and "Mmmmmm". He even did the dishes! The meatloaf felt moist and light and the flavor was great! And for Dessert....
Maple snow Cream! Thats right, SNOW is the key ingredient here. A bowl of fresh fallen snow (there is certainly no shortage here) pure maple syrup and Fresh cream (whipping or table) stir and eat right way.
Totally Canadian eh?
