Roasted Nightshades for quick, easy and versatile Meals


In the Kitchen today...



...Grilled Nightshades

Cut zucchini, eggplant, peppers, onions, garlic and cherry tomatoes
into cubes and arrange in an oven dish


Drizzle with Olive Oil, balsamic, basil and oregano

add salt and pepper to taste

roast at 350 degrees in preheated oven for 60-90  mins, or to desired texture.

Now you have the base for 4 different meals!
1)pasta
2)wraps
3)salads
4)soup


We all had to be out of the house before 6:30, so I planned for pasta, because its one of the quick and easy meals that everyone enjoys. I cooked a chicken breast for my husband, who says "it's not a meal if there is no meat." I disagree, but that's fine, he can have his with chicken. I'll reserve about half the roasted veggies for other meals this week, making my job EASY and DELICIOUS!
If desired,cube some leftover or just baked chicken for extra protein

Cook up your favorite pasta, (rice, wheat, spelt or kamut etc.)

Makes a nice pasta dish with some goats cheese


I always make extra roasted (or grilled) veggies to use over the next few days. They are great in a wrap with hummus and lettuce, mixed into a salad, or transformed into a lovely soup.
