| Cut zucchini, eggplant, peppers, onions, garlic and cherry tomatoes into cubes and arrange in an oven dish |
| Drizzle with Olive Oil, balsamic, basil and oregano |
| add salt and pepper to taste |
| roast at 350 degrees in preheated oven for 60-90 mins, or to desired texture. Now you have the base for 4 different meals! 1)pasta 2)wraps 3)salads 4)soup |
We all had to be out of the house before 6:30, so I planned for pasta, because its one of the quick and easy meals that everyone enjoys. I cooked a chicken breast for my husband, who says "it's not a meal if there is no meat." I disagree, but that's fine, he can have his with chicken. I'll reserve about half the roasted veggies for other meals this week, making my job EASY and DELICIOUS!
| If desired,cube some leftover or just baked chicken for extra protein |
| Cook up your favorite pasta, (rice, wheat, spelt or kamut etc.) |
