Baked Beans are one of our favorite bean dishes. We usually make them as part of brunch, or as food to be enjoyed along side a bonfire, not actually cooked in the fire. Being the friday of the long weekend, I thought I would share this recipe. They are great to make ahead and take to the cottage too!
Bonfire Beans
you can use 2 cans of navy beans which is faster and simpler or
soak 2 cups of white navy beans for a day and over night.
cook beans in fresh water in a large pot for a couple of hours.
Drain beans, reserving the liquid.
Pour beans into an ovenproof dish add (without needing exact measurements)
1/4 cup maple syrup
1/4 molasses
1 tbs mustard
1/3 cup ketchup, or tomato paste and more maple syrup!
salt to taste
pour enough bean liquid to just cover the beans
bake at 350 for at least 2 hours, more if you like a softer bean. Add more bean liquid as needed. Also, canned beans need less oven time too!
This recipe can be done over night or all day in the crockpot on high!
