Chicken Stew with Green Olives



I am Absolutely in Love With Sofie Dahl! For dinner Last night I wanted to make something from her Cookbook. There is always a reason we decide to make a particular recipe and I chose this one because It made me think of a friend whom I share a running joke about Olives! The recipe put a smile on my face and that was reason enough for me!



                                             Sweat the fennel and garlic with olive oil in a pot
                                    Add a can of shopped tomatoes and a cup of white wine
                           Add Chicken. I had precooked it, and pulled it a part before adding it here. Simmer for 30                  
                                           minutes adding chicken stock here and there.
   Before serving add 1/2 a cup of green Olives and a handful of fresh, chopped Basil. remove from heat.

                    I threw some fresh baby spinach around my bowl before eating. It was delicious! So easy too!
