Blueberry Bliss

 I absolutely love Blueberries, more certainly when they are fresh, Local and WILD!!!! I buy a lot when they are in season, intending to make, pies, jams, buckles and a stash for the freezer. However in all my years of blueberry worshiping I have rarely been able do do anything other than eat them by the handful, until they are gone! There has been the odd occasion where a few will fall into a pancake or muffin recipe.

I have found A blueberry Muffin recipe from the organic cookbook series by Renee Elliott that claims to be the best. Of course I had to try it, and it is fantastic!! So fantastic that I thought it worthy of sharing.

Best BLUEBERRY yogurt Muffins

2 cups all-purpose flour
1 tbs baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs beaten
1 cup light brown sugar
1 cup plain yogurt
1 stick of butter (1/4 cup) melted
1 tsp vanilla
1 cup blueberries, fresh or frozen
sugar and cinnamon for dusting

pre heat oven to 375 degrees f.
sift flours and powders and salt in a large bowl. In a separate bowl  beat the eggs, add sugar, yogurt, butter and vanilla. Add wet to dry and mix until just blended. Divide the mix into lined or buttered muffin tin. Dust with cinnamon and sugar.
Bake for 12-15 mins.

       With all this thinking of Blueberries I have to share my most favorite Blueberry memory. It was during My stay at The Farm, And I do mean Ina Mays Midwifery Farm in Summer town Tennesse. Between "classes" One of my friends and I went exploring their huge property. There was so much to see, we actually never saw it all. But we did happen to stumble upon the most incredible Blueberry patch I have ever seen. The word patch actually doesn't fit, it was more like an orchard. The way we have rows and rows of apples, they had rows and rows of beautiful blueberry trees I guess. We were suddenly high, giggling and dancing around, our senses completely alive and Delighted. It was so magical that for some reason I ended up nude,  and together we gathered as much blueberries as we could eat! Later we went back with buckets, and clothes, and I think we ate them with giggles the entire time we were stayed at the farm. By far my favorite foodie moment! Days of Blueberry Bliss! 


I have it planned that after breakfast tomorrow, I'll make jam! Wow, imagine how many blueberries were used to make paint?
