Healthy School treats

With School only days away and a strong desire to be overly organized, while waiting for the rain today we spent some time baking healthy and yummy school lunch or snack treats. Usually I'll bake enough to last in the freezer for a week or two. They don't all make it as far as the freezer of course!

Today we baked the  Zucchini Chocolate chip cookie recipe from Barbara Kingsolver's Animal, Vegetable, Miracle AND zucchini "mini" muffins.


                                     

Here is the recipe! Bake at 350 for 10 mins!

Lap top Lunches' Bento Box is My favorite lunch system. Its totally litter-less, easy, and a perfect way to add variety and small portions. I got ours at Natures Emporium.





Zucchini "mini"  Muffins:

1/2 cups flour ( I use a light Spelt)
2 tsp baking soda
1/2 salt
1 TBS cinnamon

mix dry ingredients in a large bowl. Then add:

1 beaten egg
1/2 cup brown sugar or maple syrup
1/2 cup sunflower oil
up to 1/4 cup water for consistency 
1 tsp vinegar
1 tsp vanilla

Blend with dry ingredients until just mixed. Then stir in:

1 1/2 cups shredded zucchini ( I like a mix of yellow and green)
1/2 cup raisins (optional)

Oil mini muffin tin, spoon batter in and bake at 350 for about 10 mins.
