With the cold damp weather today, a soup for lunch was in order. After some Mothers day shopping, I arrived home just past lunchtime, hungry and craving something warm. Normally, making a soup requires a bit of planning and time. Then I remembered one of my favorites; Green Pea Soup! Peas are one of my favorite things and soup is another! This soup can be made in minutes, when time is short. Actually its so simple and easy that I didn't think to blog about it, until it occured to me that,
quick, simple, easy, yet, whole and healthy is just the thing to blog about! Usually, we make poor food choices when we are hungry and without a plan. When your stomach is growling and you realize that it's lunch, or dinner, or snack time, but haven't prepared anything or thought about it, is when we tend to grab something that we later decide wasn't the best thing we could have eaten. So instead of cookies for lunch, I made this delicious soup in minutes with ingredients I usually have on hand.
Green Pea Soup
1 cup , or more of frozen peas
1 1/2 cups, or more of organic chicken or Veggie stock
salt and pepper to taste

| Boil Peas in water for a few minutes and drain. |
 |
| Put peas in a blender along with cold or room temp stock. Blend until smooth or desired consistency |
 |
| Transfer back to pot to re heat. Add salt and pepper to taste. |
