It was such a beautiful day at the farmers market this weekend. The weather was great, I saw some friends and bought the seasons first local produce- asparagus and rhubarb!
I love asparagus raw as a snack, its crunchy and a bit juicy too. It is also wonderful as a side veggie, slightly steamed and as a feature in your omelet.
It wasn't until I did my own EAT LOCAL CHALLENGE, that I ever bought rhubarb. Before then I was never really interested in its bitter sour taste. But after a Canadian winter I was so excited to see fresh produce, other than apples, that I bought it every week until Rhubarb season was over!
Try it in your favorite crip recipe. If you love an apple crisp, replace 1/2 the amount of apples with Rhubarb. Try a combination with strawberries too. When I didn't feel like making a crisp or pie, I would simmer thinish slices of it with a bit of water and maple syrup or honey. I'd store it in the fridge and use it as a yogurt topper or on toast with almond butter!
