Novembers Gathering

This months gathering was about embracing the transition into winter. We talked about the magic of root veggies and delicious, warming foods. As a group  we shared our deep cravings, and came up with a recipe for the winter soul. 

Over stimulating conversation we enjoyed a rich beat soup, fresh carrot, apple and beet juice, organic bread with goats cheese, tea and a super moist, vegan chocolate cake eaten as large snow flakes were seen through the windows and Yo Yo Ma played on the stereo- Magic!

I did tell the group that I would share my recipe for the soup...

BEET SOUP:

Tbs oil ( coconut or butter)
2 onions, sliced thinly
1 very large carrot, shredded
2 stalks of celery
5 or 6 med. sized beets, julienne 
Splash of apple cider
Juice of half a small lemon
8 cups veggie broth
A cup or so of water
Sea salt and fresh pepper to taste

Heat oil in a soup pot, add onions and begin to caramelize, or brown for 5 minutes. Add carrot, celery and beets, stirring for 5 mins or so until pot has become dry. Add apple cider and lemon, stirring. Add broth and water (if necessary to increase liquids) bring to a boil and reduce heat to simmer for half an hour. Season to taste and enjoy!

This soup is very cleaning and may tint your pee if you eat a lot!
