No more BEETing around the bush, make the soup!
If there is one thing my husband and I agree on most it is that we both LOVE the smell of onions and butter frying in the pan. And that is how Ive started my day, after coffee and a visit with mom of course. BEET soup. Those poor beets have been waiting patiently in the cold long enough. Today they will shine! And simmer too, They are the star of tonights winter soup. I am cooking for my near 90 year old Grampa who's Background is Polish. He has told many tales of his Mother who over 20 years had 10 Children, all of them healthy and strong and lived or living long lives. My grampa is the youngest, still Strong and healthy with a great appetite! His father, also a Ladies dress maker had a produce shop, and too along with his mother was a wonderful cook. I can only Imagine her with her fresh produce, 10 hungry children, probably a great dress and Apron and her hearty Polish cooking. In her tiny Kitchen transforming Beets and Cabbages and Potatoes into the many fond memories that have lasted over 90 years, still as fresh as the bread She baked on a daily basis. I hope my beet soup, cabbage rolls and perogies remind him of home and bring warmth in his heart on this cold winters day. I love how you can get a sense of the food you are using just by being around it. How it becomes you before you even eat it. I suppose that is one of the many joys of Cooking. Just by peeling and chopping the beets I felt quite yet sexy. With My fingers stained velvety red I felt strong and earthy. Hearty and brave. Deep and dark, like a secret waiting to be exposed!!
